Food ingredients proteins have a significant value depending on their specific functionality, solubility, taste, and purity.
Upfront’s Rhobust® EBA system captures proteins and maintains their intrinsic functionalities, e.g. strong gelling, good emulsification properties, excellent water binding, stable foaming properties, etc.
Proteins with specific biological functionalities typically have an even higher value when separated and recovered. One of the classic examples is the use of lactoferrin recovered from whey. When used in infant formulas or other health and nutritional products, the value of purified lactoferrin typically increases by several hundred percent.
Proteins recovered by use of a chromatographic method are typically high in purity (>95%), highly soluble and free of off-taste substances and discolorations. These are all desirable characteristics of high value protein products.
